Italian Pasta Salad With Salami
- 1 c. olive oil
- 4 Tbsp. lemon juice
- 2 garlic cloves
- 1/2 c. parsley flakes
- 1 to 2 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 large green pepper
- 1 large red pepper
- 1 large yellow pepper
- 1/2 lb. Genoa salami
- 1 stick pepperoni
- 8 oz. Mozzarella cheese
- 1 lb. rotelle macaroni
- 4 oz. pitted small black olives
- In shaker or jar, mix light-tasting olive oil, fresh or frozen lemon juice, garlic (minced fine), parsley flakes, dried basil, salt and pepper.
- Cook macaroni according to package directions; drain, rinse in cold water and drain again.
- Seed green, red and yellow peppers and slice into small chunks.
- Cut salami into cubes. Slice pepperoni lengthwise, then crosswise in thin slices.
- Cut cheese (preferably part skim) in bite-sized cubes.
