Easy Beef Curry & Bok Choy Stir-Fry
- 2 tsp. sunflower oil
- 1 tbsp. red or yellow
- Thai curry paste
- 10 oz. extra-lean ground beef
- 2 tbsp. Thai fish sauce
- 1 tsp. calorie-free sweetener
- 1/2 cup basmati rice
- 4 bok choy, quartered lengthwise
- 4 scallions, sliced
- Heat oil in a large wok or pan, and cook curry paste for 1 minute. Add the meat, and stir-fry for 3minutes, stirring to break up the beef.
- Add 1/2 cup water, the fish sauce, and the sweetener, and simmer gently for 5 minutes.
- Cook the rice in 1 cup salted water; bring to a boil, cover, and simmer for 15 minutes until rice is tender and the liquid is completely absorbed.
- Add bok choy and scallions to meat, and cook for 1 minute until just wilted. Serve with the rice.
