Mom'S Persimmon Cookies
- 2 c. persimmon pulp
- 2 c. raisins, soaked
- 4 c. flour plus 2 Tbsp.
- 1 c. shortening or margarine
- 1 tsp. salt
- 1 tsp. nutmeg
- 1 tsp. vanilla
- 2 c. chopped nuts
- 2 c. sugar
- 1 c. brown sugar
- 2 eggs
- 1 tsp. cinnamon
- 1 tsp. cloves
- 2 tsp. soda
- Mix pulp with soda and set aside.
- Cream shortening, sugar, eggs and vanilla.
- Blend thoroughly; add pulp.
- Sift all dry ingredients and mix in raisins and nuts.
- Add by cupful to liquid mixture.
- Drop by teaspoonful on ungreased cookie sheet if nonstick (grease lightly if other).
- Bake at 350u0b0 for 10 to 12 minutes or until golden brown.
- Cookies will be soft and moist. Cookies freeze well.
