Turkey With Ginger Salsa
- 1/4 c. vinegar
- 2 Tbsp. soy sauce
- 2 Tbsp. grated ginger root
- 1 clove garlic, minced
- 1 tsp. seeded, finely chopped dried red chili pepper or 1 tsp. crushed red pepper
- 4 turkey breast tenderloin steaks (about 1 lb. total)
- 1 medium tomato, peeled, seeded and chopped
- 1 green onion, sliced
- 1/4 c. chopped green sweet pepper
- 1 Tbsp. chopped fresh cilantro
- 4 (6-inch) flour tortillas (optional)

- For marinade:
- Combine vinegar, sherry, soy sauce, ginger root, garlic and red pepper.
- Set 2 tablespoons mixture aside. Pour remaining marinade into a plastic bag.
- Close bag; refrigerate 1 hour, turning once.
