Red Bean And Rice Salad
- 1/2 lb. smoked low-fat turkey sausage in casings
- 1 c. plus 3 Tbsp. garlic red wine vinegar
- 1 (15 or 16 oz.) can red beans, drained and rinsed
- 1 c. cooked brown rice
- 1/2 c. cucumber, peeled, seeded and diced
- 1/2 c. sweet red pepper, cored, seeded and diced
- 1/4 c. celery, diced
- 1/4 c. green onions, thinly sliced
- 1 Tbsp. extra virgin olive oil
- 2 tsp. coarse grain mustard
- 1 Tbsp. fresh thyme, minced
- 1 clove garlic, minced
- 1/2 tsp. hot red pepper sauce
- salt and freshly ground black pepper to taste
- Combine sausage and 1 cup vinegar in a nonreactive saucepan; bring to a boil over medium heat.
- Cover, reduce heat to low and simmer for 5 minutes, or until sausage is cooked through.
- Remove sausage from vinegar; cut into 1-inch pieces and set aside.
