Mocha-Almond Pie
- 2 oz. unsweetened chocolate
- 2 oz. semi-sweet chocolate
- 1/2 c. (1 stick) margarine or butter
- 1 Tbsp. instant coffee
- 1 c. sugar
- 1/4 c. light corn syrup
- 3 eggs
- 2 Tbsp. sour cream
- 1 tsp. vanilla
- 1 unbaked 9-inch pastry shell
- 1/2 c. sliced almonds
- Heat oven to 350u0b0.
- Place chocolates, margarine or butter and instant coffee in a large, microwave-safe bowl.
- Cook on High (100% power) for 2 minutes, until margarine is melted.
- Remove from oven; stir until chocolate is completely melted.
- Stir in sugar and corn syrup.
- Beat in eggs, sour cream and vanilla. Pour into pie shell; sprinkle with almonds.
- Bake in a 350u0b0 oven for 45 minutes or until knife inserted 1-inch from the center comes out clean.
- Cool on rack.
- Makes 8 to 10 servings.
