Pumpkin Chocolate Chip Muffins(Low Calorie)
- 2 1/2 Cup All Purpose Flour
- 2 Cup Sugar
- 1/2 Cup Whole Wheat Flour
- 2 tsp. Baking Powder
- 1 1/2 tsp. Cinnamon
- 1 tsp. Salt
- 1/2 tsp. Baking Soda
- 1/2 tsp. Nutmeg
- 1 Egg
- 3/4 Cup Egg Substitute
- 1 (15 oz. Can) Pumpkin
- 1/2 Cup Unsweetened Applesauce
- 1/4 Cup Canola Oil
- 1 Cup Semisweet Chocolate Chips
- In mixing bowl, combine the first 8 ingredients. In another bowl combine the egg-egg substitute, pumpkin and applesauce and oil.
- Stir into dry ingredients until moistened.
- Stir into chocolate chips.
- Coat muffin cups with non-stick cooking spray. Fill 2/3 full with batter.
- Bake at 400 for 18-22 minutes or until toothpick comes out clean.
- Cool 5 minutes on wire rack.
