White Lightning Chili(8 Servings)

  1. Put beans in large, heavy pot.
  2. Add enough cold water to cover 3 inches above beans and soak overnight.
  3. Either fry or simmer chicken about 15 minutes until tender; drain.
  4. Cool.
  5. Remove skin. Cut chicken or tofu into cubes.
  6. Drain beans.
