White Lightning Chili(8 Servings)
- 1 lb. Great Northern white beans, rinsed and picked over
- 2 lb. boneless chicken breasts or firm tofu (for vegetarians)
- 1 Tbsp. olive oil
- 2 medium onions, chopped
- 4 garlic cloves, minced
- 1 pt. sour cream
- 2 to 4 Tbsp. chili powder
- 2 tsp. ground cumin
- 1 1/2 tsp. oregano, crumbled
- 1/4 tsp. cayenne pepper
- 6 c. chicken stock or broth
- 3 c. grated Monterey Jack cheese (12 oz.)
- Put beans in large, heavy pot.
- Add enough cold water to cover 3 inches above beans and soak overnight.
- Either fry or simmer chicken about 15 minutes until tender; drain.
- Cool.
- Remove skin. Cut chicken or tofu into cubes.
- Drain beans.
