Everything Smoked-Salmon Summer Rolls
- Hot water
- 8 (8- to 9-inch) round rice paper sheets
- 16 Bibb lettuce leaves (from 1 head lettuce)
- 8 ounces smoked salmon slices
- 1 English cucumber, cut into 40 (2-inch) batons or sticks (about 2 cups)
- 2 large ripe avocados, each cut into 16 thin slices
- 1 cup (about 48) thin radish slices (about 8 radishes)
- 1/4 cup roughly chopped fresh cilantro
- 1/4 cup sliced fresh basil
- 1/2 cup creme fraiche
- 1/2 teaspoon lemon zest plus 1 Tbsp. fresh juice (from 1 lemon)
- Pour hot water to depth of 1 inch into a large, shallow dish. Dip 1 rice paper sheet in hot water to soften, about 20 seconds.
- Place softened rice paper on a flat surface. Place 2 lettuce leaves in center of rice paper; top with 1 oz. smoked salmon slices, 5 cucumber batons, 4 avocado slices, 6 radish slices, 1/2 tablespoon each of cilantro and basil, and about 1/2 tablespoon of Everything Bagel Seasoning. Fold sides over filling, and roll up, burrito style.
- Place roll, seam side down, on a serving platter. Cover with damp paper towels to keep from drying out. Repeat procedure with remaining rice paper and filling ingredients, refreshing hot water as needed.
- Stir together creme fraiche, lemon zest, and lemon juice. Serve with rolls.
