Louisiana Gumbo
- 2 Tbsp. grease
- 2 Tbsp. flour
- chopped onions
- chopped garlic
- 1 can tomato sauce
- 1 can water
- chopped bell pepper
- chopped celery
- chopped green onions
- chopped parsley
- 1 large can tomatoes
- 1 qt. boiling water (salted)
- 1 pkg. frozen chopped okra
- little sugar
- bay leaf
- Tabasco sauce
- salt and pepper
- red peppers
- gumbo file
- crab meat, shrimp, oysters, chicken or turkey (any kind of meat)
- Heat grease in skillet.
- Add flour and stir constantly, until flour is brown like fudge.
- Add chopped onions and garlic; fry a little.
- Then add tomato sauce and water.
- Add chopped bell pepper, celery, green onions and parsley; cook for 2 minutes.
- Add large can tomatoes.
- Now, have large pot ready with not more than 1 quart of boiling water (salted).
- Add mixture from skillet to water and add okra.
- Season with a little sugar, bay leaf, Tabasco sauce, salt and pepper, red peppers and gumbo file.
- Add the meat.
