Granola Crusted Salmon
- 4 salmon fillets, 1 inch thick (1 1/2 lb)
- 1/4 cup all-purpose flour
- 1 egg, beaten
- 1/2 cup Nature ValleyTM oats 'n honey protein granola
- 1/4 cup ProgressoTM plain panko crispy bread crumbs
- 1/2 teaspoon salt
- 1 tablespoon grated lemon peel
- 2 tablespoons grated Parmesan cheese
- Additional salt and ground black pepper, if desired
- Heat oven to 350u0b0F. Line cookie sheet with foil, and spray foil lightly with cooking spray.
- Coat salmon with flour; brush tops of salmon with egg, and place on cookie sheet. In food processor, place granola. Cover; process until large pieces are broken up and granola forms a coarse meal.
- In large bowl, mix granola, bread crumbs and salt. Top salmon with granola mixture, lemon peel and cheese.
- Bake 20 to 25 minutes or until fish flakes easily with fork. Sprinkle with additional salt and ground black pepper.
