Three-Bean Barbecue Bake
- 2 teaspoons vegetable oil
- 1 1/2 cups chopped onion
- 1 cup chopped green pepper
- 1 cup chopped sweet red pepper
- 2 cloves garlic, minced
- 3/4 cup low-sodium ketchup
- 1/2 cup firmly packed brown sugar
- 1/4 cup molasses
- 1 tablespoon cider vinegar
- 1 teaspoon dry mustard
- 1 (16-ounce) can Great Northern beans, drained
- 1 (16-ounce) can no-salt-added kidney beans, drained
- 1 (16-ounce) can lima beans, drained
- Vegetable cooking spray
- Heat oil in a large nonstick skillet over medium-high heat. Add onion, peppers, and garlic; saute 5 minutes or until tender. Stir in ketchup and next 4 ingredients; bring to a boil. Stir in beans.
- Pour mixture into an 11- x 7- x 1 1/2-inch baking dish coated with cooking spray. Bake, uncovered, at 325u0b0 for 55 minutes or until bubbly.
