Cranberry Meatballs
- 2 lb. ground lean beef
- 2 Tbsp. minced onion
- 1/3 c. dried parsley
- 1 c. crushed crumbs
- 1/4 tsp. pepper
- 1/3 c. ketchup
- 12 oz. chili sauce
- 2 Tbsp. soy sauce
- 2 eggs
- 2 tsp. garlic powder
- 2 tsp. salt
- 1 can cranberry sauce (whole)
- 2 Tbsp. brown sugar
- 1 Tbsp. lemon juice
- Combine beef, soy sauce, onion, eggs, parsley, garlic, crumbs, salt and pepper. Mix well. Shape into balls the size of a large olive. Place meatballs into baking pans. Combine cranberry sauce, ketchup, brown sugar, chili sauce and lemon juice. Heat, stirring, until cranberry sauce melts. Pour sauce over meatballs and bake for 45 minutes at 350u0b0. Yields 60 meatballs.
