Lake'S Shrimp Creole
- 1 1/2 c. shrimp
- 1 pinch black pepper
- 1 tsp. Texas Pete hot sauce
- 1 small white onion, chopped
- 4 bay leaves
- 2 Tbsp. bacon drippings
- 1 pinch basil
- 1 pinch oregano
- 1/2 can tomato paste
- 1 (8 oz.) can stewed tomatoes
- 1 Tbsp. flour
- 2 c. cooked rice
- 1/2 slice cooked bacon
- 1 tsp. salt
- 1 chopped green pepper
- 1/3 c. sliced mushrooms
- 2 stalks chopped celery
- 2 (8 oz.) cans whole peeled tomatoes
- Saute onions, peppers and celery in bacon drippings.
- Add stewed tomatoes and sliced whole skinless tomatoes, garlic and spices.
- Add 1/2 cup water and let simmer for at least 20 minutes. Add shrimp and simmer for 5 to 8 minutes or until shrimp are done.
- Serve over hot, white rice.
- Serves 4.
