Chow-Chow Relish

  1. Combine chopped vegetables; sprinkle with salt.
  2. Let stand 4 to 6 hours in a cool place.
  3. Drain well.
  4. Combine vinegar, sugar and spices.
  5. Simmer 10 minutes.
  6. Add vegetables.
  7. Simmer 10 minutes.
  8. Bring to boiling.
  9. Pack, boiling hot into hot pint jars, leaving 1/4-inch headspace.
  10. Adjust caps.
  11. Process 10 minutes in boiling water bath.
  12. Yield: about 4 pints.
