Delmas' Old Fashioned Chicken Bog

  1. Season a chicken hen with salt, pepper and red pepper if desired.
  2. Place in a large cooking pot and fill with water.
  3. Boil for 3 to 4 hours or until chicken is tender, adding more water as needed to keep the pot full.
  4. Cool.
  5. Remove chicken.
  6. Remove skin and discard.
  7. Take meat off the bone and tear into small pieces. Cook sausage.
  8. Cut into small pieces.
  9. Add cream of chicken soup to chicken stock.
  10. Bring to a boil; cool.
  11. Measure stock and bring back to the boil.
  12. Add 3/4 cup of rice to each cup of stock. Stir.
  13. Add as much chicken and sausage as desired.
  14. Stir.
  15. Cover and cook at medium heat for 20 to 30 minutes or until rice is tender.
  16. Cover top of rice with black pepper.
