Zippy Bean Stew
- 2 15 oz. cans kidney beans, drained
- 1 15 oz. can black beans, drained
- 1 15 oz. can white beans, drained
- 1 qt. fresh or canned tomatoes, chopped
- 1 can chicken broth
- 1/2 c. chopped onion
- 1 c. chopped mushrooms
- 3 or 4 garlic cloves
- 1/2 or 3/4 lb. chopped smoked sausage or beef
- 1 tsp. dried basil
- 1 tsp. Italian seasoning
- 1 tsp. salt, to taste
- 1 tsp. pepper
- 1/2 to 3/4 tsp. crushed red pepper
- If using fresh tomatoes, cook with onions, mushrooms and garlic in 3 qt. saucepan until nearly tender.
- Add broth and beans with the chopped meat.
- Add seasonings and bring to a boil. Simmer for 45 minutes to 1 hour covered.
- Makes 8 to 10 nice servings.
