Green Pea, Carrot And Mozzarella Salad
- 1 c. fresh or frozen green peas
- 1 medium-size carrot, peeled and chopped
- 1/2 small stalk celery, chopped
- 1 oz. part-skim Mozzarella cheese, cut into small cubes
- 2 Tbsp. plus 1 tsp. buttermilk
- 2 green onions, chopped fine
- 1 Tbsp. plain low-fat yogurt
- 1 1/2 tsp. mayonnaise
- 1/2 tsp. red wine vinegar
- 1/2 tsp. dried basil, crumbled
- 1/8 tsp. black pepper
- 1/4 tsp. sugar
- In a small heavy saucepan, bring an inch of unsalted water to a boil.
- Add the peas and carrot, cook for 5 minutes.
- Drain, rinse under cold running water to stop the cooking and drain again.
- Place in a medium-size bowl.
- Add the celery and cheese and toss well to mix.
