Gül'S Lentil Patties
- 1 cup red lentils
- 4 cups water
- 2 tablespoons tomato paste
- 1 cup uncooked bulgur wheat
- 1 small onion, finely minced
- 2 tablespoons olive oil
- 1/8 teaspoon ground red pepper
- 1/4 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/3 cup chopped fresh parsley
- 1/4 cup fresh lemon juice
- Romaine lettuce leaves
- Lime wedges
- Cook lentils, uncovered, in water over medium-high heat 12 to 15 minutes or until tender (do not drain). Stir in tomato paste and bulgur; cover and let stand 20 minutes. Combine lentil mixture, onion, and next 8 ingredients.
- Form football-shaped patties, using a heaping tablespoon of mixture for each patty. Serve on romaine lettuce leaves with lime wedges.
