Tomatillo Salsa
- 2 cups diced fresh tomatillos (about 4 large)
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/4 cup chopped green bell pepper
- 2 garlic cloves, minced
- 1 tablespoon plus 1 teaspoon olive oil
- 1/2 cup clam juice or chicken broth
- 1/4 cup canned chopped green chiles
- 1/4 cup lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1 teaspoon chopped fresh cilantro
- Saute first 5 ingredients (tomatillo through garlic) in hot olive oil in a skillet for 5 minutes. Add clam juice and next 6 ingredients (chiles through red pepper); cover, reduce heat, and simmer, stirring occasionally, 15 minutes. Remove from heat, and keep warm. Stir in cilantro.
