Tomatillo Salsa

  1. Saute first 5 ingredients (tomatillo through garlic) in hot olive oil in a skillet for 5 minutes. Add clam juice and next 6 ingredients (chiles through red pepper); cover, reduce heat, and simmer, stirring occasionally, 15 minutes. Remove from heat, and keep warm. Stir in cilantro.
