Pork Stir-Fry
- 8 ounce lean pork
- 1/2 red bell pepper
- 1/2 cup fresh mushrooms
- 1 tablespoon olive oil
- 1 garlic
- 1/2 tablespoon Atkins Teriyaki Sauce and Marinade
- 1/3 tablespoon Atkins hoisin sauce
- 2 tablespoon sherry wine
- 3/4 cup fresh snow peas
- Rinse and chop pepper and mushrooms into bite-sized pieces; rinse pea pods; mince garlic; set aside. Rinse and cut pork into thin strips on a separate cutting board. Spray a nonstick skillet with cooking spray and heat on medium, add the garlic and the pork and stir-fry until pork is done, about 5 minutes; remove pork from skillet and keep warm. In same skillet, heat oil on high and stir-fry vegetable until tender, but still firm, about 3 minutes; add teriyaki sauce, hoisin sauce and sherry wine and stir-fry for 2-3 more minutes. Return the pork to the skillet and cook one more minute. Serve.
