Chocolate Zucchini Cake
- 2 1/2 c. flour (unsifted)
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- 3/4 c. soft butter or margarine
- 3 eggs
- 2 tsp. grated orange peel
- 1/2 c. milk
- 1 c. chopped nuts
- 1/2 c. cocoa
- 1 1/2 tsp. soda
- 1 tsp. cinnamon
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. coarsely shredded zucchini

- Preheat oven to 350u0b0.
- Combine flour, cocoa, baking powder, soda, salt and cinnamon; set aside.
- With rotary mixer, beat butter and sugar until blended.
- Add eggs, one at a time, beating after each with a spoon.
- Stir in vanilla, orange peel and zucchini.
- Alternately stir in dry ingredients and milk.
- Add nuts.
- Bake in 10-inch tube pan for 1 hour or until done.
- Cool in pan 15 minutes, then cool on rack.
