Grilled Vegetables(Serves 6)
- 1/3 c. white balsamic vinegar
- 2 Tbsp. olive oil
- 2 shallots, finely chopped
- 1 tsp. dried Italian seasonings
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 tsp. molasses or honey
- 1/2 lb. baby carrots
- 1 red bell pepper, seeded
- 1 yellow bell pepper, seeded
- 2 zucchini
- 2 yellow squash
- 1 large onion
- Stir together first 7 ingredients in a large bowl. Set aside. Cut carrots and next 5 ingredients into large pieces. Add to vinegar mixture. Let stand 30 minutes, stirring occasionally. Drain vegetables. Arrange vegetables evenly in a grill basket. Grill, covered with grill lid, over medium-high heat (350u0b0 to 400u0b0) for 15 to 20 minutes or until crisp-tender, turning occasionally. If desired, bake vegetables in a 400u0b0 oven, using all the juices for 15 minutes, stirring occasionally.
