Apple Harvest Pudding
- 1 c. sugar
- 1/4 c. shortening
- 1 egg
- 1 c. flour
- 1 tsp. soda
- 1/2 tsp. allspice
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1 c. milk
- 1 large banana, cubed
- 1 c. peeled, grated apple
- 1 c. seedless raisins
- 1/2 c. shredded coconut
- 1/2 c. chopped walnuts
- In medium bowl cream sugar and shortening.
- Add egg and beat well.
- Combine flour, soda, salt and spices and add to sugar and egg mixture, alternating with 1 cup milk.
- Mix until moistened, then add the remaining fruits and nuts.
- Pour into greased and floured 9 x 13-inch baking pan.
- Bake in preheated 350u0b0 oven for 25 to 30 minutes.
- Can be iced when cool or served with whipped cream or ice cream.
- A thin cream cheese icing is good on this, and freezes well.
- Serves 15.
