Coffee Toffee Balls
- 2 c. granulated sugar
- 1 c. light brown sugar
- 1 c. light corn syrup
- 1 c. light cream
- 1 c. butter
- 1/2 c. milk
- 1/2 c. double-strength coffee
- 1 dash salt
- 4 tsp. vanilla
- walnut halves
- Combine
- granulated
- sugar and packed brown sugar, corn syrup, light
- cream,
- butter, milk, coffee and salt in a large heavy saucepan.
- Cook
- over
- moderate
- heat,
- stirring often, until sugars
- dissolve
- and butter melts.
- Lower heat.
- Cook, stirring occasionally,
- until
- candy
- reaches 240u0b0 on a candy thermometer. Continue cooking, stirring constantly so mixture doesn't burn, until candy reaches 246u0b0 (a bit dropped in cold water will
- form a firm ball).
- Remove from heat immediately; let stand 2 minutes. Stir in vanilla.
