Waldorf Astoria Red Cake
- 1/2 c. shortening
- 1 1/2 c. sugar
- 2 eggs
- 2 heaping Tbsp. cocoa
- 2 oz. red food coloring
- 1 1/8 c. buttermilk
- 2 1/4 c. cake flour
- 2 1/2 c. regular flour, sifted
- 1 tsp. salt
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 tsp. vinegar (red)
- Cream shortening and sugar.
- Add eggs and set aside.
- Make a paste of cocoa and food coloring; add to creamed mixture.
- Add buttermilk alternately with flours mixed with salt.
- Add vanilla. Combine baking soda and vinegar and add to batter.
- Blend well. Turn into 2 lightly greased and floured 8 or 9-inch cake pans. Bake at 350u0b0 for 25 to 35 minutes.
- Cool slightly, then turn out on rack.
- Cool completely before frosting.
