Posole
- 3 lb. pork loin, cubed
- 12 c. water
- 1 medium onion, chopped
- 6 bay leaves
- 3 (15 oz.) cans hominy
- 1/4 c. chopped parsley
- salt and pepper to taste
- 8 tsp. seasoned salt
- 2 garlic cloves
- 4 ribs celery, chopped
- 2 Tbsp. chili powder
- shredded cabbage or lettuce
- sliced green onions
- oregano
- sliced radishes
- lime wedges
- Combine all, except the chili powder. Simmer 3 to 4 hours or until the meat is tender. Remove the bay leaves and garlic cloves. Add chili powder and simmer 20 more minutes. Serve with separate bowls of cabbage or lettuce, green onion, oregano, radishes and limes. Let each guest top the stew with their choice of condiments. Flavor is richest if stew is made a day ahead and reheated.
