Oatmeal Scotchies
- 1 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c. butter or margarine, softened
- 3/4 c. sugar
- 3/4 c. firmly packed brown sugar
- 2 eggs
- 1 tsp. vanilla
- 3 c. oats, uncooked (quick or old-fashioned)
- 1 (12 oz.) pkg. (2 c.) Nestle butterscotch morsels
- Preheat oven to 375u0b0.
- In small bowl, combine flour, baking soda, salt and cinnamon.
- Set aside.
- In large bowl, combine butter, sugar, brown sugar, egg and vanilla.
- Beat until light and fluffy.
- Gradually add flour mixture.
- Stir in oats and morsels. Drop by level tablespoonfuls onto ungreased cookie sheets.
- Bake at 375u0b0 for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crispy cookies.
- Makes about 4 dozen 3-inch cookies.
