Mushroom Grits
- 3 tablespoons grits, uncooked
- 1/4 cup (1 ounce) shredded reduced-fat Cheddar cheese
- Butter-flavored vegetable cooking spray
- 1/3 cup chopped fresh mushrooms
- 1 teaspoon minced garlic
- 1 tablespoon canned no-salt-added beef broth, undiluted
- 1 teaspoon chopped fresh parsley
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon hot sauce
- 1/8 teaspoon salt
- Cook grits in a small saucepan according to package directions, omitting salt and fat. Add cheese, stirring until cheese melts. Cover and keep warm.
- Coat a small nonstick skillet with cooking spray; place over medium heat until hot. Add mushrooms; saute 2 minutes. Add garlic; saute 1 minute. Remove from heat. Stir in beef broth and remaining ingredients.
- Add mushroom mixture to grits, stirring well. Serve immediately.
