Chow-Chow
- 1 gal. chopped cabbage
- 12 green sweet peppers, chopped
- 12 red sweet peppers, chopped
- 12 onions, chopped
- 2 qt. green tomatoes, chopped
- 5 Tbsp. ground mustard
- 2 Tbsp. mixed whole pickling spices
- 1 Tbsp. turmeric
- 1 Tbsp. ground ginger
- 5 c. light brown sugar (or 1/2 brown and 1/2 granulated sugar)
- 2 to 3 qt. vinegar
- Chop cabbage, onions, tomatoes and peppers.
- Add 1/4 cup salt. Let stand overnight.
- Press all salt water out.
- Put mixed spices in a bag.
- Add sugar and spices to vinegar and simmer until hot and well seasoned.
- Remove spice bag.
- Pack mixture in hot jars and cover with hot vinegar mix and seal.
- Do not grind cabbage, onions, tomatoes and peppers, it will be too soft.
