Blueberry Açaí Bowl
- 5 medjool dates, pitted
- 2 (3-ounce) pkgs. frozen unsweetened acai puree (such as Sambazon)
- 2 cups frozen blueberries
- 1 peeled banana, frozen and divided
- 1/2 cup coconut water
- 1/4 cup prepared granola
- 1/4 cup fresh blackberries
- 1/4 cup fresh raspberries
- 2 tablespoons unsweetened coconut flakes, toasted
- 2 tablespoons ground flax meal
- 1 tablespoon chia seeds
- Coarse sea salt, to garnish
- Blend dates, acai puree, blueberries, 1/2 a banana, and coconut water until thick and smooth. Add more coconut water if too thick to blend.
- Pour mixture into two small bowls; evenly divide the remaining ingredients to top both bowls, forming separate rows of each ingredient. Sprinkle with salt, if desired. Serve immediately.
