Yellow Squash Pie
- 5 eggs, separated
- 3 cups cooked, mashed yellow squash
- 2/3 cup sugar
- 1/2 cup evaporated milk
- 1 tablespoon all-purpose flour
- 1 tablespoon butter or margarine, melted
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 baked (9-inch) pastry shell
- Ground nutmeg
- 1/2 teaspoon cream of tartar
- 1/2 cup plus 2 tablespoons sugar
- Beat egg yolks in a Dutch oven until thick and lemon colored. Add next 8 ingredients; mix well. Cook over medium heat until thickened. Pour mixture into pastry shell. Sprinkle with nutmeg.
- Beat egg whites (at room temperature) and cream of tartar until foamy. Gradually add remaining sugar, one tablespoon at a time, beating until stiff peaks form. Spread over hot filling, sealing to edge of pastry. Bake at 350u0b0 for 10 minutes or until golden brown. Cool.
