April'S Little Hands Pizza

  1. Saute onion and celery in lard until browned.
  2. Stir in flour and salt and slowly add water.
  3. Simmer 15 minutes, stirring frequently.
  4. Add tomatoes, peas, vinegar, sugar, shrimp and chili powder.
  5. Cook 10 minutes more.
  6. Place rice in a large, deep serving plate and pour Creole mixture over it.
  7. Makes 6 servings.
