Pepper Steak
- 3 c. cooked rice
- 1 lb. lean beef
- 1 Tbsp. paprika
- 2 Tbsp. butter
- 2 cloves garlic
- 1 1/2 c. beef broth
- 1 c. sliced green onions (fresh)
- 2 green peppers, chopped
- 2 Tbsp. cornstarch
- 1/4 c. each: water and soy sauce
- 2 large tomatoes, quartered (optional)
- While rice is cooking, pound steak and cut into bite size pieces.
- Sprinkle meat with paprika; allow to stand while preparing other ingredients.
- Using a large skillet, brown meat in butter. Add garlic and broth.
- Cover; simmer for 30 minutes.
- Add water, if needed.
- Stir in onions and green peppers.
- Cover; cook 5 minutes more.
- Blend cornstarch, water and soy sauce; stir into meat mixture, stirring until clear and thickened (about 2 minutes).
- Add tomatoes and stir.
- Serve over rice.
- Serves 5 or 6.
