Pepper Steak

  1. While rice is cooking, pound steak and cut into bite size pieces.
  2. Sprinkle meat with paprika; allow to stand while preparing other ingredients.
  3. Using a large skillet, brown meat in butter. Add garlic and broth.
  4. Cover; simmer for 30 minutes.
  5. Add water, if needed.
  6. Stir in onions and green peppers.
  7. Cover; cook 5 minutes more.
  8. Blend cornstarch, water and soy sauce; stir into meat mixture, stirring until clear and thickened (about 2 minutes).
  9. Add tomatoes and stir.
  10. Serve over rice.
  11. Serves 5 or 6.
