Creamy Green Enchiladas(Yum-Yum)
- 1 lb. ground beef
- 1 tsp. salt
- 8 oz. Cheddar cheese, grated
- 1 large onion, chopped
- 1 can cream of chicken soup
- 3/4 c. evaporated milk
- 1 (8 oz.) pkg. Velveeta cheese, cubed
- 1 (4 oz.) can green chiles, chopped
- tortillas (corn)
- salad oil
- Combine beef and salt; brown in skillet.
- Pour off drippings. Stir in cheese (Cheddar) and onion; set aside.
- Combine soup, milk and cheese (Velveeta) in a medium pan; place over low heat.
- Stir constantly until cheese is melted; add chiles and set aside.
- Fry tortillas in oil.
- Spread tortillas with meat mixture.
- Roll tight and place in baking dish.
- Pour cheese sauce over tortillas.
- Cover with foil and bake at 350u0b0 for 30 minutes.
