Curried Bean Salad Bake
- 1 (1 lb.) can fruit cocktail, drained
- 1/4 c. butter
- 1 chopped onion
- 1 green pepper, coarsely chopped
- 1 tsp. curry powder (should be put in hot butter first)
- 2 (1 lb.) cans kidney beans
- 2 fresh tomatoes, chopped
- 1/2 c. brown sugar
- 1 Tbsp. vinegar
- 1/2 bay leaf
- 1/2 tsp. dried thyme
- 1/4 tsp. salt
- pepper
- dash of red pepper sauce
- Heat butter, onion, green pepper and curry powder (should be put in hot butter first).
- Cook until tender.
- Add fruit cocktail, kidney beans, tomatoes, brown sugar, vinegar, bay leaf, dried thyme, salt, pepper and dash of red pepper sauce.
- Bake at 350u0b0 in casserole for 45 minutes, uncovered.
- Garnish with green pepper rings.
- Serve hot or cold (for summer).
