Hot Chicken Salad
- 4 c. cooked chicken, cubed
- 2 c. celery, diced
- 4 hard-boiled eggs
- 1 1/2 c. mayonnaise
- 1 tsp. salt
- 2 Tbsp. lemon juice
- 1 Tbsp. onion juice (may omit)
- 2 pimentos, cut fine
- 1 c. Cheddar cheese, grated
- 1 1/2 c. potato chips, crumbled
- Combine mayonnaise, salt, lemon juice, onion juice and pimentos.
- Add chicken, celery and hard-boiled eggs; stir gently to coat.
- Pour into lightly greased 13 x 9-inch pan.
- Top with grated Cheddar cheese and then top with crumbled potato chips.
- Bake at 350u0b0 for 35 to 40 minutes.
- Yield:
- 8 servings.
- Excellent when served with spiced peaches and soft rolls.
- Spice peaches with sprinkles of one or more of your favorite spices, cinnamon, nutmeg, ginger, cloves, etc.
