Catfish Gumbo

  1. Cook celery, green pepper, onion and garlic in vegetable oil in Dutch oven until tender.
  2. Add broth, tomatoes, okra, crushed red pepper, gumbo file, salt and pepper.
  3. Cover and simmer 20 minutes. Place fish on vegetables.
  4. Cover and simmer 15 minutes longer or until fish flakes easily when tested.
  5. Serve with hot cooked rice. Makes 6 servings.
