Tomato Conserva(Miscellaneous)
- 12 Italian plum tomatoes
- 3 cloves of garlic
- 2 T. olive oil
- zest of one lemon
- 1 tsp freshly chopped oregano
- 1 Tbsp. red wine vinegar
- 1 tsp honey
- salt and pepper to taste
- Remove cores from the plum tomatoes and cut in half.
- Slice garlic thin and press into tomato halves.
- On an oven proof pan, coat the tomatoes with the olive oil, salt and pepper.
- Place in a 350 degree oven.
- Roast the tomatoes until they are slightly brown and soft.
- This will take approximately 15 - 20 minutes.
- In a stainless steel bowl, mix the remaining ingredients and stir.
- Add in tomatoes and mix with a fork to break up the tomatoes and infuse the flavor.
- This recipe can be used on grilled salmon, but can also be used for pork or chicken.
