Cheese Souffle
- 4 sliced white bread (without crusts)
- 4 Tbsp. butter
- 2 c. grated Swiss or Cheddar cheese
- 1 Tbsp. flour
- 4 eggs
- 1 1/2 c. milk
- ham bits or bacon bits
- 1/2 tsp. salt
- 1/4 tsp. pepper
- parsley
- sliced, sauteed onions, mushrooms, green and red peppers (optional ingredients)
- Butter bread with 2 tablespoons butter, place upside down in 8 x 8-inch glass baking dish.
- Saute onions, mushrooms, green and red pepper, ham or bacon bits in 2 tablespoons butter.
- Sprinkle over bread.
- Dust cheese with flour and sprinkle over.
- Whisk eggs, add milk, salt, pepper and parsley.
- Pour over bread.
- Cover and refrigerate 4 hours or overnight.
- Bake, uncovered, 35 minutes until fluffy and brown at 375u0b0.
- Makes 4 to 6 servings.
