Edamame-Avocado Hummus
- 2 cups refrigerated shelled edamame (1 9-oz. container)
- 1/2 cup loosely packed fresh cilantro leaves (from 1 bunch)
- 1/4 cup olive oil
- 1/4 cup tahini (sesame paste)
- 1/4 cup fresh lime juice (from 3 limes)
- 1 tablespoon toasted sesame oil
- 1/2 tablespoon Sriracha chili sauce
- 1 teaspoon kosher salt
- 1 teaspoon grated fresh ginger
- 1 medium-size ripe avocado, peeled (about 6 oz.)
- 1 teaspoon white sesame seeds
- 1 teaspoon black sesame seeds
- Assorted vegetables (such as sugar snap peas, carrots, radishes, endive, cucumber, and cherry tomatoes)
- Process edamame, cilantro, olive oil, tahini, lime juice, sesame oil, Sriracha, salt, ginger, and avocado in a food processor until smooth. Transfer mixture to a large serving bowl. Sprinkle with sesame seeds, and serve with
