Skillet Pork And Sauerkraut
- 4 to 5 oz. lean pork chops
- 3 Tbsp. vegetable oil
- 1 c. sliced onion
- 1 garlic clove, minced
- 2 c. rinsed, drained sauerkraut
- 1 c. apple juice
- 1 tsp. caraway seed
- 1/4 tsp. dried thyme
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 small apple, cored and sliced
- Broil chops on preheated broiler 4 inches from heat 2 minutes on each side.
- Heat oil in large skillet.
- Add onion and garlic. Cook over medium heat until softened.
- Add 1/4 cup water and remaining ingredients except apple.
- Top with chops and simmer, covered, on low heat about 1 hour or until chops are tender.
- Then stir in apple slices and simmer about 3 minutes.
- Serves 2.
