Cinnamon-Sour Cream Coffee Cake
- 1 c. (1/2 lb.) butter or margarine
- 1 1/4 c. sugar
- 2 eggs
- 1 c. sour cream
- 2 c. all-purpose flour
- 1/2 tsp. soda
- 1 1/2 tsp. baking powder
- 1 tsp. vanilla
- 3/4 c. finely chopped walnuts, combined with 1 tsp. cinnamon and 2 Tbsp. sugar
- In large bowl with electric mixer, combine butter, sugar and eggs.
- Beat until the mixture is light and fluffy.
- Blend in sour cream.
- Sift flour, soda and baking powder into the creamed mixture; add vanilla.
- Blend well.
- Spoon half of batter into a 9-inch tube pan or a 10-inch Bundt pan which has been buttered and floured.
- Sprinkle half the cinnamon-nut mixture over batter. Spoon in remaining batter and top with rest of nut mixture.
- Place in cold oven, set at 350u0b0 and bake about 55 minutes.
- Serve warm or cool.
- Makes 8 to 10 servings.
