Apple Bread

  1. Preheat oven to 325u0b0.
  2. Spray 2 loaf pans with vegetable cooking spray.
  3. In a large bowl, using an electric mixer, beat together the sugar, oil and eggs.
  4. In a separate bowl, stir together dry ingredients.
  5. Add dry mixture to batter; mix just until blended.
  6. Stir vanilla, apples and pecans into batter.
  7. Pour batter into prepared loaf pans.
  8. Bake for 1 hour, or until inserted knife comes out clean.
  9. Yields 2 loaves, 16 servings each.
  10. Each serving contains 189 calories (47% from fat).
