Spinach Pasta
- 1 package (10 ounces) frozen, chopped spinach, thawed
- 1 tablespoon water
- 4 large eggs (7/8 cup eggs)
- 4 cups sifted all-purpose flour
- Place spinach in a towel and wring out all water until spinach feels very dry. Assemble and attach the KitchenAid(R) Food Grinder attachment to the KitchenAid(R) Stand Mixer. Use the fine grinding plate, turn to Speed 4 and grind spinach. Discard unground spinach that remains in grinder body.
- Place ground spinach, water, and eggs in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed 4 and mix 30 seconds. Add flour to bowl. Turn to Speed 2 and mix 45 seconds.
- Remove flat beater and attach dough hook. Turn to Speed 2 and knead 1 minute. Hand knead dough for 30 seconds to 1 minute. Cover with dry towel and let rest 15 minutes before extruding through KitchenAid(R) Pasta Maker attachment.
- Note: For best results use only Flat Noodle (Plate 3), Macaroni (Plate 4) and Lasagna (Plate 5) plates with this recipe.
- Tip: To cook pasta, Add 1 tablespoon salt and 1 tablespoon oil to 6 quarts boiling water. Gradually add pasta and continue to cook at a slow boil until pasta is "al dente" or slightly firm to the bite. Pasta floats on top of the water as it cooks, so stir occasionally to keep pasta cooking evenly. When done cooking, drain in a colander.
