Susan G. Cooke'S Exposition Cookies
- 1 cup butter or margarine, softened
- 1 1/2 cups sugar
- 3 eggs
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
- 1 cup chopped raisins
- Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs; beat well.
- Sift together flour, soda, and spices in a medium mixing bowl; add to creamed mixture, stirring well. Stir in raisins. Cover and refrigerate overnight.
- Roll to 1/4-inch thickness on a lightly floured surface; cut with a 2 1/2-inch round cutter. Place 2 inches apart on lightly greased cookie sheets; bake at 350u0b0 for 8 to 10 minutes. Remove from cookie sheets, and cool on wire racks.
