Spice-Rubbed Pork Tenderloin With Mango Sambal

  1. Preheat oven to 425u0b0.
  2. To prepare pork, combine first 8 ingredients in a small bowl. Rub pork tenderloin with spice mixture; refrigerate for 20 minutes.
  3. Place pork on a broiler pan coated with cooking spray. Bake at 425u0b0 for 20 minutes or until meat thermometer registers 160u0b0. Let stand 5 minutes; cut into 1/4-inch-thick slices.
  4. To prepare sambal, combine mango and remaining ingredients. Serve sambal with pork.
