Chicken A La King

  1. Fry green pepper gently in butter and oil for 5 minutes.
  2. Add mushrooms and fry for 5 minutes more.
  3. Transfer green pepper and mushrooms to a plate.
  4. Stir flour into remaining butter and oil and cook for 2 minutes.
  5. Gradually blend in milk and chicken stock or water.
  6. Cook until sauce comes to a boil and thickens.
  7. Lower heat to medium and add green pepper, mushrooms and chicken.
  8. Cover the pan and cook thoroughly for ten minutes.
  9. Beat cream with the egg yolks and wine or lemon juice.
  10. Add to chicken mixture and cook 2 to 3 minutes more, but do not boil.
  11. Season with salt and pepper.
  12. Serves 4.
