Marinated Vegetables
- 2 heads cauliflower
- 3 green peppers
- 3 pimentos
- 2 lb. carrots
- 1 bunch celery
- 1 lb. mushrooms
- 3 zucchini
- 1 bunch broccoli
- 2 cucumbers
- 1 box (pt.) cherry tomatoes
- 1/2 c. salad oil
- 2/3 c. olive oil
- 1/2 c. lemon juice
- 3 c. tarragon vinegar
- 1/2 c. sugar
- 3 cloves garlic
- 1 Tbsp. salt
- 1 Tbsp. prepared mustard
- 1 Tbsp. tarragon leaves
- pepper to taste
- Cut vegetables into bite-size pieces. Combine oil, olive oil, vinegar and remaining ingredients. Stir until well mixed. Pour over vegetables. Cover and chill at least 12 hours. Stir occasionally. Makes 30 servings.
