London Broil
- 1/2 c. olive oil
- 1/4 c. vinegar
- 1/4 c. lemon juice
- 1 bay leaf, crushed
- 1 clove garlic, crushed
- 1 medium onion, thinly sliced
- 1/2 tsp. oregano
- 1/2 tsp. pepper
- 1 tsp. salt
- 2 1/2 lb. beef round steak, 1 1/2-inches thick
- Mix all ingredients together.
- Place meat in a large baking dish and pour the mixture over meat.
- Cover and let stand at room temperature for 4 hours, turning the meat occasionally.
- Remove the meat from marinade and drain well.
- Heat a large skillet over moderately high heat (375u0b0).
- Sprinkle pan with a small amount of salt and brown meat 5 to 6 minutes on each side.
- Reduce heat to medium low (225u0b0).
- Cook ten minutes or to the degree of desired doneness.
- Cut diagonal slices across grain.
